One of the easiest GF chicken recipes

Seen in the photo is corn Chex crusted chicken cutlets with homemade sweet potato fries!

Prepare chicken cutlets as you normally would, we buy Harvestland chicken breasts or thighs from BJ’s. Crush up corn Chex (or any Chex of your choice for different flavor) and put it in your chicken and bake! It’s the same as using breadcrumbs but gluten free, of course. To make sweet potato fries, just slice them up, put them on a baking sheet with some olive oil & you’re good to go! Sometimes we like to switch it up with CARROT fries instead of sweet potato. For this, you just slice up some carrots (we use the baby ones), put them on a baking sheet, put some pepper & olive oil on top & bake until you get your desired texture! They taste really good and your mind thinks you’re actually having sweet potatoes/yams.

Also forgot to mention we use 95% of the time organic/non-GMO ingredients, frozen or not!

I need to learn baking/cooking times! 😉

Sooo here’s something my Mom makes every week because it’s just a delicious recipe she made up! (sometimes alters it of course)

In a large pan good for pan-frying veggies & throwing quinoa in after is ideal. She cuts up some broccoli, peppers (the spicy frozen ones from Trader Joe’s), chicken sausage of your choice, I recommend the sweet apple chicken sausage from Trader Joe’s (for non-vegetarian), yams/sweet potatoes, onions & quinoa. I’m not positive on the cooking times, but regardless, it is a very quick preparation but AMAZING the next day or two once all the flavors merge together!

This is a very special post... above is the package of gluten free biscotti's I got in NYC a while back at a place called BisCoLatte! This place is AMAZING!!! Their gluten free biscotti are literally the best gluten free cookies I have ever had and their drinks (coffee) are amazing as well! The biscotti's were a perfect texture, fresh, great for dipping, and there isn't just one boring flavor, but MANY! I assume they change according to the seasons but I highly recommend everyone goes to their "Find Me Gluten Free" app & find this place!

Trader Joe’s <3

Trader Joe’s is probably my favorite food market. 🙂 They have everything & anything unique/delicious. I try everything! Haha. These are one of my most recent discoveries..

Sweet sesame seaweed snack! I love the regular seaweed snack, but this one is 100x more amazing & tasteful! It has a subtle sweet taste. I eat it right out of the bag although it does suggest using it as a topping. The only downside is they are a bit oily, but HEALTHY!!!

Great article I found with different protein/energy bars that are gluten-free (a few I have tried myself & love) that will assist all you GF fitness people out there! My favorite are the Think Thin bars. The KIND & LUNA bars are always good too! I’m not a huge fan of Lara Bars, BUT you might be! Maybe I just have to try different flavors..

This weekend was a rare occurrence. We had a leisurely weekend without planning anything or working on projects and it really felt like a mini-vacation, even though we didn’t travel anywhere. Since I graduated from college with my undergrad degree two years ago, I felt like I’d been living on a scrambler carnival ride non-stop. I treasured having some time to recharge and definitely agree with the sentiment that the best ideas, creativity, and motivation comes from taking a time out from the bustling.

S’MAC in New York City

I am going to NYC soon and my girlfriends are excited about visiting their favorite S’MAC. I was of course terrified. A noodle restaurant and on top of it a mac and cheese (yes most cheese mixtures contain flour) restaurant.

SO thrilled to see they can make most of it gluten free now. I am lucky and don’t have reactions in restaurants that could have cross contamination (unless they serve me the regular version on accident – yes it has happened to me in Minneapolis once)

THE choices- I just checked out the build your own. I could go there every day of my trip!!!

Can’t wait to be there.

Gluten-free Apple, Cinnamon & Oatmeal pancakes

Pancakes might not seem like the most exciting recipe ever, but who doesn’t love a plate of fluffy pancakes on a Saturday morning?  A lot of the gluten free pancake recipes I’ve come across so far just seem overly complicated – ingredient lists a mile long, and far too much work for my groggy self on a weekend morning. 

This recipe came about by playing with my favourite regular pancake recipe, and reading more than a few gluten-free pancake recipes.  It’s simple, quick, and as tasty as a regular wheat pancake.

1 cup white rice flour
1/3 cup potato flour
1/3 cup rolled oats
1 apple, peeled and grated
1 Tbsp baking powder
1 Tbsp sugar
1 tsp cinnamon
1 cup buttermilk
1 egg
2-3 Tbsp butter, melted
Pinch of salt

Combine dry ingredients in a bowl
