After making Black Bean Salad for the Potluck Stamp of Approval series, I kept thinking that the salad would be really great as an appetizer. But how??
Tostitos Scoops!! (Or some other variation of a cup-like tortilla chip)
This makes a wonderful bite-size appetizer that is fun and delicious — so much so that I have dubbed them Fiesta Cups!
Fiesta Cups
- Recipe for Black Bean Salad minus the olive oil
- Bag of Tostitos Scoops
Using a spoon, fill each individual tortilla cup with black bean salad. Try to get each scoop to contain most, if not all, of the ingredients in the salad.
Don’t assemble the cups too far in advance. The cups will stay firm and not get too soggy (this is why you eliminate the olive oil) for several hours. However, you don’t want to chance them getting soggy if made hours before your party or…
