Sooo here’s something my Mom makes every week because it’s just a delicious recipe she made up! (sometimes alters it of course)
In a large pan good for pan-frying veggies & throwing quinoa in after is ideal. She cuts up some broccoli, peppers (the spicy frozen ones from Trader Joe’s), chicken sausage of your choice, I recommend the sweet apple chicken sausage from Trader Joe’s (for non-vegetarian), yams/sweet potatoes, onions & quinoa. I’m not positive on the cooking times, but regardless, it is a very quick preparation but AMAZING the next day or two once all the flavors merge together!
